The Bikini Cocktail

Serves 10 servings

Ingredients for the Clementine Cordial (produces 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar

Ingredients for the Premix (yields 850ml, to serve 10)

400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing

To prepare the Syrup: Place all the components inside a pan, bring to a light boil, mixing until the sugar dissolves. After that, remove from the burner and leave to cool down entirely. Pour to a sterilised bottle, seal and store in the refrigerator, it can be stored for around a month.

Preparing the Premix: Combine the specified liquid ingredients into a big jug, let it rest for 60 minutes, then pass it through , ideally through muslin, so it's completely strained.

For serving: Pour 85ml of the cocktail base into your mixing glass packed with ice, gently stirring carefully for a minute to chill. Pour to a cold coupe glass or equivalent, garnish with the cranberries and complete it by giving it a brief mist with the mandarin essence over the drink.
